I love cheese, it takes a simple dish to a whole new level. It makes a dish tastier and richer just like this keto cauliflower and bacon casserole. This dish is healthy, low in carbs, easy to make and delicious, you will even forget that you are eating cauliflower. This is a great replacement for baked potatoes or macaroni cheese.

Cheesy Cauliflower and bacon casserole is a great dish that even kids can enjoy. If you have kids who don’t like cauliflower, make this dish for them and they will keep on asking for more. It is flavourful, filling and the crisp bacon makes it amazing.

I like to make casseroles when I am hosting guests or when I am tired because they are easy to make and they don’t need much attention or for me to be on my feet for long time. It’s just mixing everything together and putting it into the oven. It is so easy but the result is satisfying. Another good thing about casseroles especially this cheesy Cauliflower and bacon casserole is you can prepare the ingredients a night before, leave them in the fridge and remove them when you are ready to put in the oven. It saves time and makes life easier.

The other good thing about casseroles is you really don’t have to stick to a certain recipe, you can tweak the recipe to suit your taste buds or according to the ingredients you have. For example in this recipe when you don’t have enough cauliflower you can mix it with broccoli and it will still taste good. Cooked chicken can also be replaced for bacon and if you are a spicy person you can add diced jalapeno or  chillies.

Cauliflower is very low in calories yet high in vitamins and minerals like vitamin B6, C, K, folate, potassium, magnesium, manganese and phosphorus. It is also high in fibre which promotes a healthy digestive system. Cauliflower has antioxidants which help in reducing inflammation and protecting against chronic diseases.

To the cauliflower, cheese is added which is a great source of protein, calcium, fat, Vitamin A and B12 as well as zinc, riboflavin and phosphorus. Cheese gives the fat we need in a keto diet and helps the dish to taste even better.

What are the ingredients needed for cheesy keto cauliflower and bacon casserole?

Cauliflower – low carb and keto friendly. Potato and macaroni substitute.

Cheddar and cream cheese – flavouring, binding and adds creaminess to the casserole.

Bacon – adds flavour and crispness

Crispy bacon

Sour cream– adds a creamy texture.

Spring onions – adds flavour and colour. Shallots or chives can also be used.

Salt – to balance the flavours and adds taste to the casserole.

Black pepper and garlic powder – adds flavour

How to make keto cauliflower and bacon casserole

Start by cutting the cauliflower into small florets and then steam for 5-7 minutes. Alternatively you can bake the cauliflower in the oven. After steaming drain excess water and set aside. In a bowl mix sour cream, cream cheese, chopped bacon, garlic powder, blacker pepper, ½ of the cheddar cheese and half of the spring onions. Add cauliflower and toss until well coated. Sprinkle with remaining cheese and bake. After baking, sprinkle the top with the remaining spring onion and serve.

You can serve this dish as it is and a salad of your choice like Keto Tuna Salad or Chunky keto cucumber salsa. You can also add a protein dish like Keto pork chops or Keto ginger steak

You can keep leftovers in the fridge, in an airtight container for 3 days.

Ingredients For Easy Cheesy Keto Cauliflower and Bacon Casserole

½ head cauliflower

3 strips bacon cooked and chopped

175g grated cheddar cheese

60g cream cheese

⅓ cup sour cream

¼ cup spring onions finely chopped

½ teaspoon salt

¼ teaspoon garlic powder

¼ teaspoon black pepper

Instructions for Easy Cheesy Keto Cauliflower and Bacon Casserole

1.Preheat oven to 175°c. Grease casserole dish.

2. Chop cauliflower into small florets and steam for 5 minutes.

If necessary, drain excess water.

3. In a large bowl, mix cream cheese and sour cream until smooth then add ½ of the grated cheese, ½ of the chopped spring onion, chopped bacon, pepper, salt and garlic powder.

Mix well then add cauliflower and toss until well coated.

4. Pour cauliflower mixture in the casserole, sprinkle with the remaining cheese and bake for 20-30 minutes and cheese has melted.

5. Remove from the oven, sprinkle the top with the remaining spring onion and serve.

  1. I am sure your baked version would be better, but since I am the only one who eats this, I cook a single serving of cauliflower in the microwave. I make a microwave sauce of butter, Swiss cheese, and half-and-half to pour over the cauliflower. Last time, I took a hint from you and added crumbled bacon over the top.     1. Thank you, it’s even better if you roast the cauliflower first instead of steaming it lol I use the steaming method because it saves time.

      I will also try your microwave version, a good recipe when you are hungry and do not have time to wait.
