Most quiche recipes are high in carbs due to the pastry used as the crust. When you are on a Keto diet you should try to reduce carbs intake as they will hinder you from getting into ketosis. Does this mean you should stop eating food you like? No you can still enjoy food you like by taking out ingredients which are high in carbs and replace with ingredients which are low in carbs or without carbs. That’s what I did to this quiche recipe, l removed the crust because it is high in carbs and we are left with a crustless quiche recipe which is low in carbs to suit our keto diet plan. This quiche still tastes good and it’s easier to make in less time than the one with a crust.

Crustless quiche is an easy but filling breakfast, lunch or dinner idea. There are a variety of ingredients you can use as your filling like bacon, ham, sausage, mushroom, spinach, onions as well as other meat and vegetables you like. There is no rule for you to stick to but you can play around with the ingredients you have in your kitchen, it is like making pizza. Remember to cook your toppings before mixing them with other ingredients to get rid of excess moisture. Different types of cheese like cheddar, Swiss, gouda, feta, etc can be used. 

It is very easy to make a crustless quiche as you just have to mix all the ingredients together and put in the oven. Quiches are usually baked in a pie plate but a cast iron skillet can be used. A muffin tray can also be used to bake individual quiche. Leftover quiche can be kept in the fridge for 3-4 days. You just have to reheat it in the microwave before serving it. It can also be frozen for  3 months. Quiche can be made ahead and kept in the fridge for 2 days before baking it. Remember to bring it to room temperature before baking. If you bake it straight from the fridge, increase the baking time.

With just 6 ingredients, this is the easiest and delicious Crustless quiche recipe you can make. The ingredients  are eggs, heavy cream, bacon, cheese, salt, pepper and butter to grease the pan to prevent the quiche from sticking.

Eggs – help the ingredients to bind together. Eggs are nutritious, they are high in protein, vitamin B2, B6, B12 and vitamin D. They are also rich in zinc, copper and iron.

Heavy cream- helps to fluffy the eggs and lighten the dish while adding richness to eat. Without the cream, we can end up with a dense quiche.

Cheese – adds flavour and help to bind the ingredients together.

Salt and pepper– adds flavour. You can also add other spices of your choice.

When making quiche start by preheating the oven to 175°c. Fry bacon until crisp and set aside to cool. While the bacon is cooling,grate cheese and set aside.  Crack eggs into a bowl and whisk them. Add cream, cheese, salt, pepper and mix. Chop bacon and add to the bowl and whisk everything well together to incorporate air for a light and fluffy quiche. Transfer to a pie plate and bake for 22-25 minutes or until the quiche is set. Remove from the oven and allow the quiche to cool down in the plate before cutting it. Serve and enjoy.

Ingredients For Bacon and Cheese Keto Crustless Quiche Recipe

6 rashers of bacon

6 eggs

160 mls heavy cream

126g  cheddar cheese

½ teaspoon pepper

½ teaspoon salt

1 tablespoon butter

Method For Bacon and Cheese Keto Crustless Quiche Recipe

1.Preheat oven to 175°c and grease a pie plate.

2. Cook bacon until crispy and set aside to cool.

3. Grate cheese and set aside. Crack eggs into a bowl and whisk. Add cheese, heavy cream, salt, pepper and whisk to mix.

4. Chop bacon and add to other ingredients. Whisk everything together until well incorporated.

5. Transfer to a pie plate and bake for 22-25 minutes or until quiche is set.

6. Remove from the oven and allow to cool before serving.

7. Serve and enjoy.
