Only 3 ingredients are needed to make this dish which are ham, cheese and eggs. 

Ham is rich in protein which helps in keeping you fuller for longer. It is important to choose ham with no added sugar. Ham adds crispness to this dish and it holds the eggs and the cheese.

Cheese is a great source of protein, fat and calcium. It helps in fueling our bodies with energy because of the fats. It adds flavour to this dish. You can use any type of cheese you have or prefer.

Eggs are loaded with different nutrients like protein, vitamins, minerals as well as fats. Whole eggs or yolk can be used in this recipe.

Salt, pepper or other spices can be used in this dish as well as herbs.

How to make keto baked and cheese egg cups

This is a very easy recipe to make. Preheat oven to 200°c. Grease or spray a muffin tin. Place one slice of ham in each muffin hole, pressing to the edges. Add cheese then crack an egg  into each ham hole. Season with salt and pepper. Bake in the preheated oven for  10-15 minutes depending on how runny you want your yolk to be. Remove from the oven sprinkle the top with chopped green onions or parsley. Allow to cool for 2 minutes before serving.

Alternatively you can add the eggs 1st then put the cheese on top, the choice is yours. You can also whisk the eggs with  cooked bacon,spinach, mushroom, herbs, etc before adding to the ham holes.

Can I make keto baked ham and cheese egg cups ahead of time?

Yes you can. After baking allow them to cool then put in an airtight container and into the fridge. They can keep well for a week. When you are ready to eat, just put in a microwave safe plate, cover with a paper towel and reheat at high for 30seconds. You can also wrap them individually in plastic wrap, put in an airtight container or ziplock bag and freeze upto 3 months. Thaw them in the fridge over night before reheating.

12 eggs

1 cup cheddar cheese

Salt and pepper to taste

Chopped green onion or parsley to garnish
