How to make keto baked and cheese egg cups
This is a very easy recipe to make. Preheat oven to 200°c. Grease or spray a muffin tin. Place one slice of ham in each muffin hole, pressing to the edges. Add cheese then crack an egg into each ham hole. Season with salt and pepper. Bake in the preheated oven for 10-15 minutes depending on how runny you want your yolk to be. Remove from the oven sprinkle the top with chopped green onions or parsley. Allow to cool for 2 minutes before serving.
Alternatively you can add the eggs 1st then put the cheese on top, the choice is yours. You can also whisk the eggs with cooked bacon,spinach, mushroom, herbs, etc before adding to the ham holes.

Yes you can. After baking allow them to cool then put in an airtight container and into the fridge. They can keep well for a week. When you are ready to eat, just put in a microwave safe plate, cover with a paper towel and reheat at high for 30seconds. You can also wrap them individually in plastic wrap, put in an airtight container or ziplock bag and freeze upto 3 months. Thaw them in the fridge over night before reheating.
