Chicken salad is delicious, filling, healthy and easy to make with chicken breast, crispy fresh vegetables and creamy good mayonnaise. I like salads as they don’t need much time to prepare just like my egg salad and my Tuna salad .I also like that they are versatile, I can eat them as a meal on its own, as an accompaniment to a dish, on sandwiches, etc. Chicken salad is one of the easiest salads to make because you can add different vegetables, fruits, nuts, herbs and spices. You can also use different salad dressings like mayyonaise, Greek yoghurt, pureed avocado, etc.

Which chicken parts should be used?

A lot of people including me like to use chicken breast as it is soft, easy to cook and boneless. You just have to season the breast, bake them or fry them in a pan, leave them to cool then chop or shred them. However, I like to chop them first and fry them because this way they take less time to cook. Chicken thighs can also be used. They need to be cooked until the meat is so soft and easily fall from the bone.

What should be added to chicken salad?

I like to keep my chicken salad as simple as possible and to use ingredients I already have in my kitchen. For this chicken salad recipe I used crispy lettuce, onion, tomato, green pepper, spring onions and cooked mixed vegetables which are carrots, peas, grean beans and sweet corn. However you can also add  apples, grapes, cranberries, pineapple, raisins, avocado, olives,bell peppers, celery and nuts. Herbs like Parsley, corriander, sage, rosemary, thyme can be added as well as spices like paprika, cayenne pepper and garlic powder. You can literally add anything you can think of.

How to keep leftover chicken salad?

leftover chicken salad can be kept in the fridge in an airtight container for 3-5 days. I don’t recommend to freeze chicken salad because the Mayo will seperate when defrosting. However cooked chicken can be frozen and defrosted in the fridge overnight and then add other ingredients to make the salad.

Ingredients For Easy, Quick and Loaded Homemade Chicken Salad Recipe

1 chicken breast diced(1 cup)

1/4 cup mixed vegetables

1/4 lettuce 

1/2 green pepper 

1/2 onion 

1 tomato 

spring onion 

1 teaspoon salt

1 teaspoon pepper

2 tablespoons mayonnaise

2 tablespoons oil

Method For Easy Quick and Loaded Homemade Chicken Salad Recipe

1.Heat oil in a pan, add chicken, salt and fry until chicken pieces starts to brown. Remove from the pan and allow to cool.

2. In the same pan cook mixed vegetables until soft, remove and allow to cool.

3. While Chicken and mixed vegetables are cooling, chop lettuce, onion, pepper, tomatoes and spring onion and set aside.

4. In bowl add chicken, vegetables, salt, pepper, mayyonaise and mix everything together until well incorporated.

5. Chill in the fridge for at least 15 minutes and serve.
