Creamy, delicious, healthy and ready in a few minutes, this is the easiest keto mayonnaise recipe to make with just 5 ingredients. There are four ways to make this keto mayonnaise recipe which are using an immersion blender, food processor, hand mixer or a whisk. It is a quick recipe to make and I am going to show you how to make mayonnaise using the four methods.
I like salads especially Keto egg salad and Keto tuna salad. It is difficult when you are on a keto diet to find mayonnaise which is low in carbs and sugar free. Most store bought mayonnaise do have sugar, modified starch and highly refined oils. After putting all these into consideration, I decided to make my own homemade keto mayonnaise which is sugar free and uses healthy oils like olive oil and avocado oil.
Mayonnaise is oil, eggs and some seasonings while oil is the base and the most dominant ingredient. It is important to use healthy oils which are not refined or GMO. Keto diet is a high fat diet so don’t allow the high fat content in mayonnaise to scare you as long as you are using healthy oils. It is important to make your own mayonnaise at home as you will know exactly what kind of oil you are using. However there are brands which sell good mayonnaise just remember to read the labels before buying.
Which oils are keto friendly?
Olive oil – I like to use light olive oil because it is light in colour therefore it doesn’t change the colour of my mayonnaise. It is also tasteless. I don’t recommend extra virgin olive oil for this recipe because it tastes bitter and can turn the mayonnaise to a greenish colour. However you can use half light olive oil and half extra virgin olive oil.
Avocado oil – is healthy, good for the heart and high in oleic acid which is an unsaturated fat. Avocado oil is low in bad cholesterol and high in good cholesterol. Cold pressed avocado oil is the best for this recipe as it is tasteless.
Nut oils like coconut, walnut or macadamia can also be used. Coconut oil solidifies at room temperature so it can make your mayonnaise thicker after making it.
What do I need to make keto mayonnaise?
Eggs – on this recipe I used one raw egg but two egg yolks can be used. If you don’t want to eat raw eggs you can use pasteurized eggs.
Lemon juice – helps to stabilize the mixture and adds flavour. Lime juice, apple cider vinegar, whit vinegar can be used if you do not have lemon juice.
Dijon mustard – helps emulsify the mixture and it also makes the mayonnaise taste better. Mustard powder can be used.
Salt for flavouring.
Can I add other flavours to Keto Mayonnaise?
Yes, you can add different flavourings to this keto mayonnaise. You can add;
•Herbs such as parsley, oregano, basil, dill,chives,etc
How to make homemade keto mayonnaise?
1.Using a Hand mixer
This is the easiest way to make mayonnaise without a blender. Add all the ingredients except oil to a bowl. Beat until it starts to thicken now add a little oil at a time until all oil is used and mayonnaise is thick. Do not add all the oil at once.
2. Using an immersion blender
This is the easiest way to make this keto mayonnaise recipe in less than a minute. All you need to do is to put all the ingredients into the blender cup putting the oil lastly. Place the immersion blender down to the bottom and pulse for a few seconds until the egg starts to thicken. Once the egg starts to thicken, start to move the immersion blender up and down to blend more oil for about 25-30 seconds and mayonnaise is thick.
3. Food processor
Add all the ingredients to the food processor except for the oil. Pulse for a few seconds then start to drizzle oil slowly, a little at a time. Don’t add the oil at once or too fast as this will break the mayonnaise. When you are adding the oil, keep the food processor running until all the oil is used and mayonnaise is thick, it takes about 4-5 minutes.
The whisking method is similar to the hand mixer. Add all the ingredients except for the oil to a bowl. Whisk until well mixed and begin to thicken. Add oil a little at a time and keep whisking until oil is finished and mayonnaise is thick.
How to store keto homemade mayonnaise?
Homemade mayonnaise doesn’t last long like store bought because it does not have preservatives. Put it in an airtight container and refrigerate for 1-2 weeks. Do not freeze as this will cause the eggs and oil to separate.

Ingredients For homemade keto mayonnaise recipe
1 cup light olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
¼ teaspoon salt or to taste
Method for homemade keto mayonnaise recipe.
Using a handmixer
1. In a bowl add egg, lemon juice, mustard and salt. Beat with a hand mixer until well mixed and begin to thicken.
2. Add oil a little at a time while mixing until all the oil is finished and mayonnaise is thick.
3. Transfer to a container and refrigerate. Use within 2 weeks.
Using an immersion blender
1. Add all the ingredients with oil last to a blender cup. Place the immersion blender down to the bottom and pulse for a few seconds until egg starts to thicken.
2. Start to move the immersion blender up and down to mix the egg mixture with the oil for 25-30seconds or until mayonnaise is thick.
3. Transfer to an airtight container and refrigerate. Use within 1-2weeks.
• I recommend using ingredients which are at room temperature as difference in temperature may cause the mayonnaise to break.
• Chill the mayonnaise before using as it will help it to thicken more.
• When you are using the hand mixer, whisk or food processor, remember to add the oil slowly, a little at a time to avoid breaking the mayonnaise.
