Sugar free, creamy and with just 5 ingredients, this is the easiest low carb coleslaw to make. It is a perfect side dish for keto pork chops, keto ginger steak  or fried chicken. If you have followed this blog for sometime, you have realised that I love salads and this coleslaw is one of my favorites. I love salads because they are easy to prepare, fresh and I can easily play around with the ingredients I have. It is also a good way of incorporating vegetables and fruits easily in a diet.

There are a lot of coleslaw recipes out there but most of them are not keto friendly because of the sugar added to them. It is not only about the direct sugar added but also the mayo which have sugar in it. Though these coleslaw uses cabbage which is low carb but the added sugar and mayo makes the salad high in carbs and not good for a keto diet.

Being on keto diet I had to remove and substitute other ingredients to make a low carb coleslaw. I use my keto homemade mayonnaise which is sugar free and I substituted the sugar with low carb sweeteners. Though I made these changes, this low carb coleslaw is still creamy, crunchy, delicious but with no added carbs.

Ingredients I use for coleslaw salad

I like to keep my coleslaw simple therefore I only use 5 ingredients which are;

Cabbage – low carb and crunchy. White or purple can be used. A mixture of both also works well. 

Carrots – add colour and make the salad crunchy. Carrots are optional in this recipe.

mayonnaise – makes the salad creamy.  I like to use my homemade but low carb store bought can be used.

Apple cider vinegar – low carb and adds flavour. White vinegar can be used.

Erythritol – low carb and adds sweetness. Any low carb sweeteners can be used.

Salt and pepper – adds and balances the flavours

•Celery seed, onion powder, garlic powder can also be added to this salad.

How to make coleslaw salad

Start by shredding cabbage and grate carrots and put in a bowl. In a separate bowl mix Mayonnaise, apple cider, erythritol, black pepper and salt. Stir the dressing into the cabbage and carrots, toss to mix. Chill in the fridge for at least 15 minutes before serving. It tastes better if you leave it to chill for longer or overnight.

How to store coleslaw salad

Coleslaw can be stored in a salad jar for 2-4 days in the fridge. Stir before serving.

Ingredients For Easy Coleslaw Recipe

11/2 shredded cabbage

½ cup grated carrots

¼ cup homemade mayonnaise

1 tablespoon apple cider vinegar

2 teaspoons erythritol

Salt and pepper to taste

Method For Easy Coleslaw Recipe

1. In a bowl mix cabbage band set aside

2. In a small bowl mix Mayonnaise, apple cider, erythritol, salt and pepper.

3. Stir in the dressing into the cabbage, toss until well combined

4. Chill in the fridge for at least 15 minutes before serving.

Notes

• Store bought coleslaw mix can be used to serve time

• Bell peppers can be added instead of carrots
